De Cam Malus Domestica Lambicus is een lambiek die met Gooikse Elstar appels werd vergist. Daardoor krijg je als het ware een Pajotse cider. Veel fruittonen maar ook de strakke zuren van de lambiek. Voor de Malus Domestica Lambicus werd 45 kg appels per 100 liter lambiek gebruikt.
